Today I will share with you my favorite recipe for a quick and tasty spanakopita. In Greek it is called the "lazy-people" spinach pie. It is perfect for lunch, dinner or snack. This recipe is a perfect choice for those who don't have much time to cook or for beginners in the kitchen. It's worth a try!
Ingredients:
500 gr spinach ( I use ready to use, just check if it is washed or not!)
3-4 fresh onions

Step by step:
1. Chop the leek, the parsley, the dill and the onions.
2. Put the spinach, the leek, the dill and the onions in a preheated pan with olive oil. Add salt and pepper and cook for a few minutes.
3. Let it cool while you prepare the dough.
3. Put the eggs in a bowl and mix well with a whisk. Add the yogurt and continue mixing.
4. Add gradually the flour and mix until it is homogeneous.
5. Add the feta cheese in small pieces in the pan with the spinach and move it to the bowl with the dough.
6. Mix light until the spinach spreads everywhere and add some water if the dough is too dry (I put the water from the spinach that's left in the pan).
7. Spread the dough in a baking pan and bake for 50-60 minutes in a preheated oven at 18o oC on air.
P.S. If you don't use a silicon pan, smear its bottom with olive oil using a brush
