Greek Portokalopita is a delightful traditional and famous dessert. Here’s a classic and easy, though lighter, recipe to guide you through making this delicious cake:

Ingredients:

For the cake:

1/2 tsp. baking soda
150 gr. Orange jam 
1 orange
150 gr. sunflower oil
100 gr. Greek Orange Blossom Honey
200 gr. yoghurt
2 eggs
20 gr. baking powder
150 gr. all purpose flour
300 gr. semolina (krupice in Czech)

For the syrup:

250 gr. water
100-150 gr. coconut sugar
1 cinnamon stick
2-3 whole cloves
1 orange

Step by step:

For the syrup: 
Put the water, orange zest, sugar, cinnamon and cloves in a saucepan.

Stir over medium heat until the sugar dissolves.

From the time it starts to boil, boil for 5 minutes without stirring.

Leave aside to cool. 

We will add the cold syrup to the hot dessert.

For the cake:

1. Put the flour, baking powder and semolina in a bowl and mix them with a spoon.

2. Put the eggs in a large bowl and add the honey. Mix until the eggs rise and become fluffy.

3. Add the orange zest, oil, yogurt and orange marmalade.

4. Mix for a few seconds with a hand mixer or with your hand to homogenize.

5. Dissolve the baking soda in the orange juice and add them to the mixture.

6. Add the solid ingredients and mix gently just so that the solid ingredients are lost in the liquids.

7. Pour the mixture into the greased pan or use baking paper and bake in preheated oven to 160ºC in the air for about 40 minutes (Place the pan on the bottom rack of the oven).

Combine the Cake and Syrup:

  1. As soon as the cake comes out of the oven, slowly pour the cooled syrup over the hot cake, ensuring it is evenly distributed.
  2.  Allow the cake to absorb the syrup and cool completely before serving. This can take a few hours, so it’s best to prepare it ahead of time.leighann-blackwood--cQ2kQqpEB8-unsplash

Serving:

Portokalopita is best served at room temperature, often garnished with a dollop of Greek yogurt or a scoop of vanilla or Kaimaki ice-cream. Enjoy this refreshing and aromatic Greek dessert with a cup of coffee or tea.

Tip: If you have silicon forms, prepare individual portions, ideal for parties.
