Green Salad with Haloumi, Apple and Honey Dressing

Salad with haloumi

Do you want a quick and tasty light meal? What about a green salad with haloumi, apple and honey dressing?

It is a simple, fresh, crispy and protein salad with low calories, especially if you use low fat haloumi.

 

Ingredients:

100-150 gr Haloumi

1 tbsp walnuts or pine nuts

Mixed green salad of your choice

1 medium chopped apple (with the skin)

For the dressing:

¼ cup of Olive Oil

3 tbsp vinegar

1 tbsp Greek Honey

Step by step:

  1. Prepare the dressing: add all the ingredients in a jar with lid and mix well. Let it rest until you prepare the main salad.
  2. Cut the haloumi in pieces and roast it in preheated pan with a tsp of olive oil.
  3. Add the walnuts (or pine nuts) in the pan a minute before the haloumi is ready.
  4. Place the mixed salad in a large bowl (you can use ready-to-use washed salad), add the chopped apple (I usually cut it in cubes), the haloumi and the nuts.
  5. Pour the dressing and stir.

Tip: If you don't have nuts, you can add Carob Small Bites or Dakos.
