This goat cheese with fig dressing is a perfect salad that combines sweet and savory flavors. This salad makes a delicious appetizer or a balanced meal.
Ingredients:
- 200 gr mixed green salad
- 250 gr. goat cheese
- 1 green apple
- 50 gr dakos
- Walnuts or pine nuts
For the Fig dressing:
- 2 tbsp. Fig Jam
- ½ tbsp. balsamic vinegar
- ½ tbsp. mustard
- 2 tbsp. olive oil
- ½ orange juice
- Salt & pepper
Step by step:
- Wash well the mixed green salad or use a ready-to-eat bag.
- Cut the goat cheese in small pieces.
- Wash the green apple and cut it in small pieces (with the skin).
- Break into pieces the dakos (don’t crush it).
- Place the green salad, the goat cheese, the apple and the dakos in a salad bowl and mix well.
- Prepare the dressing, mixing all the ingredients in a bowl and mixing with a whisk. Alternatively, place them in a mason jar, close the lid and shake vigorously.
- Pour the fig dressing in the salad and stir.
Tip 1: You can prepare more fig dressing and store it in the fridge. It is an ideal dressing for green salads, burgers or hot dogs, cheeses and salty snacks.
Tip 2: Make it festive by adding some pomegranate!
