Xmas Biscuits

These are my favourite Christmas cookies, ideal for junior bakers and for those who don’t have a professional mixer😊. It ‘s also a nice way to spend some creative time with the little ones as they can play with the dough and prepare their own cookies!

Ingredients:

200 gr all purpose flour

100 gr rice flour

60 gr walnuts or almonds (or mix of them)

1/4 tsp baking powder

1/4 tsp salt

125 gr butter at room temperature

150 gr sugar

Zest of one orange

1 egg & 1 egg yolk

2 tsp mix of spices (cinnamon, cloves, ginger, cardamom)

Orange - Cardamom jam or orange jam without added sugar for the filling

Powdered sugar for sprinkling (optionally)

 

Step by step:

  1. Grind the nuts in a blender.
  2. In a bowl whisk the flours, the ground nuts, the baking powder, the salt, and the spices.
  3. In another bowl whisk the egg, the egg yolk and the sugar. Add the butter and the orange zest and stir well.
  4. Finally, add the solid ingredients in the second bowl and stir until you get a compact ball.
  5. Wrap it in cling film and put it in the refrigerator to rest for a couple of hours.
  6. Add some flour on the work surface and roll out the dough about 5mm high.
  7. Cut the dough with the Christmas cutting molds or alternatively an upside down glass.
  8. Bake at 170° C in the air for about 10 minutes, until they are golden brown.
  9. When they cool down, spread a teaspoon of the jam you prefer on half of the cookies, couple the two parts and sprinkle with powdered sugar (optionally).

 

Tip : You can of course eat them individually without the jam – in this case, add 20-30 gr sugar extra.
