Carrot Apple Cake

I love fruity cakes😊. This easy and yummy apple-carrot cake - I call it winter cake - is made of seasonal fruits and vegetables. What’s more, it is delicious with coffee or afternoon tea!

Ingredients:

2 grated apples

1 jar of sweet carrot with the sirup

3 tbsp of raisins

2 cups of all-purpose flour

1 pack of baking powder

4 eggs

½ cup of sunflower oil

3 tbsp of milk

1 tsp of cinnamon

chopped walnuts for topping (optionally)

Step by step:

  1. Place the raisins in a bowl with warm water for 20 minutes.
  2. Put the flour, the baking powder and the cinnamon in a bowl and stir.
  3. Place the eggs in a large mixing bowl and mix well. Put together the sunflower and the milk and continue to mix.
  4. Add the flour gradually and stir.
  5. Finally add the grated apples, the sweet carrot and the raisins and mix gently with a spatula.
  6. Spread the dough in a baking silicon pan and bake for 50 minutes in a preheated oven at 17o oC.

Decorate with chopped walnuts.

You can use any type of apple you have!

Big plus, you don’t need mixer,  this way the cake will be softer and juicy.
