This is the easiest recipe for delicious carrot muffins.

The secret ingredient is the Sweet Carrot. This is a ready to use jar and it has everything you need to prepare the most delicious carrot muffins in less than 1 hour.
Ingredients:
150 g sunflower (or olive) oil
1 jar of sweet carrot without the syrup
250 g all-purpose flour
100 g walnuts broken into smaller pieces
4 eggs (in room temperature)
1.5 teaspoon baking powder
1.5-2 tbsp syrup
100 g raisins (optional)
Step by step:
- Whisk the eggs well in a bowl. Add slowly the sunflower (or olive) oil and the syrup and mix well.
- Add the baking powder, the walnuts, the carrot and the raisins (if you add any) and mix.
- Finally, add the flour slowly, mixing well until a dough forms.
- Pour the mixture in small silicon cups.
- Bake for 20-25 minutes or until a knife emerges clean after being inserted inside in preheated oven at 180°C.
The sweet carrot contains spices but you can add more cinnamon or nutmeg.
Decorate with grated carrot and walnuts.
